Ice Wine Country A snowy owl is perched along the Lake Erie coast at sunset. Many vineyards along the Great Lakes produce the much sought after ice wine. The grapes are left on the vine until they have frozen twice. During the second freeze they are picked and crushed. This produces a much stronger and sweeter wine. The warmth of the lake combined with the cold temperatures inland make this process possible.
